Ingredients

Scale

Puff Pastry

  • 1 sheet store bought puff pastry (half of a 17.3 oz package, thawed)

Almond Filling

  • 1 cup (96g) blanched almond flour
  • ½ cup (104g) light brown sugar (packed)
  • ½ cup (113g) salted butter (softened)
  • 1½ tablespoons all purpose flour (plus additional for rolling the puff pastry)
  • 1 large egg
  • 1 teaspoon pure almond extract

Toppings

  • ¼ cup (28g) sliced almonds
  • Powdered sugar (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (204°C) to get it ready for baking the croissant bites.
  2. Make the almond filling: In a mixing bowl, use a hand mixer to combine almond flour, light brown sugar, softened salted butter, all purpose flour, egg, pure almond extract, and a pinch of salt. Mix until just combined, ensuring you do not overmix to keep the filling light and fluffy. Set aside.
  3. Prepare the puff pastry: Lightly flour your work surface and roll out the thawed puff pastry sheet into an 11×11 inch square. Cut the pastry into twenty-four 2×2 inch squares. Gently press each square into the cavities of a 24-count mini muffin pan to form small cups.
  4. Fill the pastry cups: Spoon about 1 tablespoon of the almond filling into each puff pastry cup. Using a small cookie scoop can help portion evenly. Then press a few sliced almonds on top of each filled pastry cup for added texture and decoration.
  5. Bake: Place the muffin pan in the preheated oven and bake for 10 to 15 minutes, or until the puff pastry is golden brown and cooked through.
  6. Cool and garnish: After baking, transfer the pan to a wire rack to cool slightly. Remove each almond croissant bite from the pan carefully. Finish by dusting them with powdered sugar before serving for an elegant touch.

Notes

  • Make sure the puff pastry is well chilled before rolling and cutting to prevent it from becoming too soft or sticky.
  • Do not overmix the almond filling to maintain a light texture; mix only until ingredients are combined.
  • If you don’t have a mini muffin pan, you can try using a regular muffin pan but adjust the size and number of croissant bites accordingly.
  • For a more pronounced almond flavor, you can toast the sliced almonds lightly before placing them on top.
  • These bites are best enjoyed the same day but can be stored in an airtight container at room temperature for up to 2 days.
