  • 3/4 cup shelled pistachios, chopped
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 2 tbsp all-purpose flour
  • 2 tbsp butter, melted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper for easy removal of the bars later.
  2. Prepare the Crust: In a mixing bowl, combine 1 cup all-purpose flour, 1/4 cup sugar, and the cold cubed butter. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking dish and bake for 10 minutes until lightly golden.
  3. Make the Blackberry Filling: While the crust is baking, combine 1 1/2 cups blackberries, 2 tablespoons lemon juice, 1/3 cup sugar, and 1 tablespoon cornstarch in a saucepan. Cook over medium heat, stirring frequently, until the mixture thickens and becomes jammy. Remove from heat and let it cool slightly.
  4. Prepare the Crumble Topping: In a bowl, mix together the chopped pistachios, rolled oats, brown sugar, 2 tablespoons flour, and melted butter until the mixture is crumbly but holds together when pressed.
  5. Assemble the Bars: Spread the cooled blackberry filling evenly over the pre-baked crust. Sprinkle the pistachio crumble topping evenly over the filling layer.
  6. Bake: Return the baking dish to the oven and bake for 20 to 25 minutes, or until the crumble topping turns a beautiful golden brown color.
  7. Cool and Chill: Allow the bars to cool completely in the pan. Then refrigerate for at least 2 hours to set before slicing into bars for serving.
