Instructions

  1. Prepare the blueberry glaze: In a small saucepan, bring the blueberries and maple syrup to a gentle boil over medium heat. Using a spoon or spatula, begin mashing the berries as they soften. Continue boiling and stirring for about 5 minutes until the mixture thickens slightly. Strain the mixture to remove solids, reserving the liquid for other uses such as pancakes. Set the thickened blueberry mixture aside.
  2. Assemble the sandwich for grilling: Butter one side of each slice of bread generously. On the unbuttered side of each slice, spread about 1 tablespoon of honey goat cheese. Place both slices butter-side down onto a medium heated griddle or skillet. On one slice, spread the prepared blueberry mixture evenly over the goat cheese, then top with fresh basil leaves.
  3. Cook and assemble: Grill the bread slices until the bottom is golden brown and the goat cheese begins to melt, about 2-4 minutes.
