Instructions

  1. Melt Butter and White Chocolate: Melt the unsalted butter in a saucepan over medium heat. Place the white chocolate chips in a separate measuring cup or bowl. Once the butter has fully melted, pour it over the white chocolate chips and let sit for 5 minutes to soften the chocolate. Whisk the mixture until smooth and then cool it for about 30 minutes until it thickens slightly.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 350 °F (175 °C) and position the oven rack in the center. Line an 8×8 inch baking pan with parchment paper and lightly spray it with non-stick cooking spray to prevent sticking.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the cooled butter-white chocolate mixture and granulated sugar until well combined and the sugar starts to dissolve, about 1-2 minutes. Add vanilla extract and whisk again. Then, add the eggs, mixing until fully incorporated.
  4. Add Dry Ingredients: Stir in the all-purpose flour and salt using a silicone spatula. Fold gently just until the batter begins to come together, taking care not to overmix.
  5. Incorporate Blueberries: Gently fold the fresh blueberries into the batter, being careful to avoid breaking them and overmixing, to keep the batter light and the berries intact.
  6. Bake: Pour the batter evenly into the prepared baking pan. Bake in the preheated oven for 35 to 45 minutes until the edges and top are caramelized and golden brown. A toothpick inserted into the center should come out with a few moist crumbs or clean.
  7. Cool and Slice: Allow the blondies to cool to room temperature in the pan. Once cooled, remove them by lifting the parchment paper, then cut into 12 or 16 slices for serving.
