Overnight Oats Base
- 2 cups whole rolled oats
- 2 tbsp chia seeds
- 1/3 cup cream cheese (softened)
- 1/3 cup Greek yogurt (plain)
- 3 tbsp maple syrup
- 2 tsp vanilla extract
- 2 cups almond milk
Blueberry Layer
- 2 cups blueberries (fresh or frozen)
- Whisk Ingredients: In a large mixing bowl, whisk together the rolled oats, chia seeds, softened cream cheese, Greek yogurt, maple syrup, vanilla extract, and almond milk vigorously until the mixture is smooth. Allow it to sit on the counter for 5-10 minutes to thicken.
- Mash Blueberries: If using frozen blueberries, heat them in the microwave for about 30 seconds in a microwave-safe bowl to thaw. Then mash the blueberries with a fork until you achieve a jam-like consistency.
- Layer Oats and Blueberries: Evenly distribute the oat mixture into 5 jars. Layer the mashed or fresh blueberries on top. Alternatively, you can mix the blueberries directly into the oat mixture if you prefer not to layer.
- Refrigerate: Seal each jar with a lid or cover tightly with plastic wrap. Place the jars in the refrigerator and let them soak for at least 4 hours or preferably overnight to allow the oats to absorb the liquid and flavors.
- Serve and Enjoy: Once the oats have soaked thoroughly, add any additional desired toppings and serve cold. You can also warm them in the microwave for about 30 seconds if you prefer a warm breakfast.
Notes
- For a vegan version, substitute cream cheese and Greek yogurt with plant-based alternatives.
- You can use any type of milk instead of almond milk, such as dairy or oat milk.
- Adjust the sweetness by varying the amount of maple syrup.
- Overnight oats can be stored in the refrigerator for up to 3 days.
- Frozen blueberries work well in this recipe and create a nice jam-like texture when mashed.
