Carrot Cake Granola
- 1 ½ cups old-fashioned oats
- 1 ½ cups grape nut cereal
- 1 ½ cups grated carrots (about 3 medium, peeled)
- 3 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 1 tablespoon coconut oil, melted
- ¼ cup water
- 4–5 tablespoons pure maple syrup
- ¼ cup raisins
Carrot Cake Granola Yogurt Bowl
- 1 cup low fat Greek yogurt (plain or vanilla)
- ¼ cup carrot cake granola
- ½ banana, sliced
- A drizzle of your favorite nut butter
- Preheat Oven: Preheat your oven to 350°F (177°C) and prepare a baking sheet by coating it with nonstick cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine the oats, grape nut cereal, grated carrots, ground cinnamon, nutmeg, and cloves, stirring them together to blend the spices evenly.
- Prepare Wet Mixture: In a separate bowl, whisk together the melted coconut oil, water, and pure maple syrup until well combined.
- Combine Mixtures: Pour the wet mixture into the dry ingredients bowl and gently stir with a spatula until every bit of cereal and carrot is coated with the syrup mixture.
- Bake Granola: Transfer the granola mixture evenly onto the prepared baking sheet. Bake at 350°F for 30-40 minutes, stirring every 10 minutes to ensure even toasting and prevent burning. Bake until the granola reaches your desired crunchiness.
- Cool and Add Raisins: Allow the granola to cool completely in the pan to crisp up. Once cooled, sprinkle the raisins on top and mix gently. Store granola in an airtight container.
- Assemble Yogurt Bowl: Spoon 1 cup of low fat Greek yogurt into a bowl. Top with ¼ cup of carrot cake granola, sliced banana, and finish with a drizzle of your favorite nut butter for extra flavor and texture.
