Ingredients

Scale

Carrot Cake Granola

  • 1 ½ cups old-fashioned oats
  • 1 ½ cups grape nut cereal
  • 1 ½ cups grated carrots (about 3 medium, peeled)
  • 3 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 tablespoon coconut oil, melted
  • ¼ cup water
  • 45 tablespoons pure maple syrup
  • ¼ cup raisins

Carrot Cake Granola Yogurt Bowl

  • 1 cup low fat Greek yogurt (plain or vanilla)
  • ¼ cup carrot cake granola
  • ½ banana, sliced
  • A drizzle of your favorite nut butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C) and prepare a baking sheet by coating it with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the oats, grape nut cereal, grated carrots, ground cinnamon, nutmeg, and cloves, stirring them together to blend the spices evenly.
  3. Prepare Wet Mixture: In a separate bowl, whisk together the melted coconut oil, water, and pure maple syrup until well combined.
  4. Combine Mixtures: Pour the wet mixture into the dry ingredients bowl and gently stir with a spatula until every bit of cereal and carrot is coated with the syrup mixture.
  5. Bake Granola: Transfer the granola mixture evenly onto the prepared baking sheet. Bake at 350°F for 30-40 minutes, stirring every 10 minutes to ensure even toasting and prevent burning. Bake until the granola reaches your desired crunchiness.
  6. Cool and Add Raisins: Allow the granola to cool completely in the pan to crisp up. Once cooled, sprinkle the raisins on top and mix gently. Store granola in an airtight container.
  7. Assemble Yogurt Bowl: Spoon 1 cup of low fat Greek yogurt into a bowl. Top with ¼ cup of carrot cake granola, sliced banana, and finish with a drizzle of your favorite nut butter for extra flavor and texture.
