4.9 from 20 reviews

This Cottage Cheese Garlic Naan is a high-protein, yeast-free twist on traditional naan bread. Made with cottage cheese, eggs, and a combination of all-purpose and almond flour, it’s fluffy, flavorful, and perfect for a quick homemade flatbread. Brushed with butter and garlic, then garnished with fresh parsley or cilantro, this naan pairs wonderfully with curries, dips, or enjoyed on its own as a savory snack.

Ingredients

Scale

Dough

  • 1 cup cottage cheese (full-fat works best)
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced

For Cooking and Garnish

  • 1 tablespoon butter for brushing
  • Chopped parsley or cilantro for garnish

Instructions

  1. Blend Wet Ingredients: In a blender or food processor, blend the cottage cheese and eggs until the mixture is completely smooth and silky, ensuring no lumps remain.
  2. Combine Dry Ingredients: In a large bowl, stir together the all-purpose flour, almond flour, baking powder, and salt, creating an even mixture.
  3. Form Dough: Pour the cottage cheese and egg mixture into the dry ingredients and gently stir until a dough forms. The dough should be slightly sticky, which is ideal for this recipe.
  4. Add Garlic: Mix the minced garlic evenly into the dough to infuse the bread with a rich garlic flavor.
  5. Shape Naan: Lightly flour your hands to prevent sticking. Shape the dough into small balls about the size of golf balls, then flatten each ball into an oval shape approximately 1/4 inch thick.
  6. Cook Naan: Heat a non-stick or cast iron pan over medium heat. Lightly brush the pan with butter. Cook each naan for 2 to 3 minutes on each side, or until they become golden brown and puff up slightly.
  7. Brush and Garnish: Once cooked, brush the warm naan with additional melted butter. Sprinkle generously with chopped parsley or cilantro for a fresh, herbal finish.

Notes

  • You can substitute half of the all-purpose flour with whole wheat flour for a nuttier flavor.
  • Using full-fat cottage cheese ensures the naan is moist and tender.
  • If you don’t have almond flour, you can use more all-purpose flour, but almond flour adds extra protein and a subtle nutty taste.
  • The dough will be sticky; avoid adding too much flour to keep the naan soft and fluffy.
  • This naan is best enjoyed fresh but can be reheated in a skillet or oven for best texture.
