Ingredients

Scale

Turkey

  • 1 (3-4 lb) turkey breast, bone-in and skin-on
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Cranberry Orange Glaze

  • 2 cups fresh cranberries
  • 1 cup orange juice
  • 1/2 cup honey
  • 2 tablespoons orange zest

Instructions

  1. Prepare the oven and glaze: Preheat your oven to 375°F (190°C). In a small saucepan, combine fresh cranberries, orange juice, honey, and orange zest. Bring the mixture to a boil over medium heat, then reduce to a simmer and cook for 10-15 minutes until the cranberries burst and the glaze thickens. Remove from heat and let it cool.
  2. Prepare the turkey breast: Pat the turkey breast dry thoroughly with paper towels to ensure crisp skin. In a small bowl, mix olive oil, minced garlic, chopped rosemary, thyme leaves, salt, and pepper to create a flavorful herb rub.
  3. Apply the herb mixture: Gently loosen the skin of the turkey breast without detaching it completely, then rub half of the herb mixture underneath the skin to infuse flavor directly into the meat. Spread the remaining rub evenly over the skin and inside the cavity of the turkey breast for maximum flavor.
  4. Roast the turkey: Place the prepared turkey breast in a roasting pan skin side up. Roast for approximately 20 minutes per pound. For a 3-4 lb breast, this will take about 1 hour to 1 hour 20 minutes. The turkey is done when the internal temperature reaches 165°F (74°C) in the thickest part.
  5. Glaze during roasting: During the last 30 minutes of roasting, brush the turkey breast with the prepared cranberry orange glaze every 10 minutes. This layering of glaze will build a shiny, flavorful coating.
  6. Rest and serve: Remove the turkey from the oven and let it rest uncovered for 15-20 minutes to allow juices to redistribute. Carve the turkey breast and serve with additional cranberry orange glaze if desired.

Notes

  • Ensure the internal temperature reaches 165°F (74°C) to guarantee the turkey is fully cooked and safe to eat.
  • Letting the turkey rest after roasting helps keep the meat juicy and tender.
  • You can prepare the cranberry orange glaze ahead of time and refrigerate it until ready to use.
  • For a deeper flavor, marinate the turkey with the herb mixture overnight under the skin.
  • If fresh cranberries are not available, frozen cranberries can be used; thaw before making the glaze.
  • Use a meat thermometer for the most accurate cooking results.
