Ingredients

Scale

Chicken and Gnocchi

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb potato gnocchi (fresh or store-bought)
  • 2 tbsp olive oil or unsalted butter
  • Salt and pepper to taste
  • 1 tsp Italian seasoning

Sauce

  • 4 cloves garlic, minced
  • 1 cup heavy cream (or dairy-free alternative)
  • ½ cup chicken broth (or vegetable broth for a vegetarian option)
  • ½ cup grated Parmesan cheese

Add-ins (Optional)

  • 1 cup spinach or kale
  • Red pepper flakes

Instructions

  1. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the bite-sized chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for 6-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Cook the Gnocchi: In the same skillet, add the remaining tablespoon of olive oil. Add the potato gnocchi and cook for 3-4 minutes, stirring occasionally, until the gnocchi are golden brown on the outside. Remove from the skillet and set aside.
  3. Make the Sauce: Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant. Pour in the chicken broth while scraping up any browned bits from the bottom of the skillet to add flavor. Stir in the heavy cream and grated Parmesan cheese, cooking for another 2-3 minutes until the sauce thickens slightly.
  4. Combine Ingredients: Return the cooked chicken and golden gnocchi to the skillet. Toss well to coat everything evenly with the creamy garlic Parmesan sauce. Stir in the spinach or kale if using, and cook for an additional 1-2 minutes until the greens are wilted and tender.
  5. Serve: Taste and adjust seasoning with salt, pepper, and optional red pepper flakes as desired. Serve hot, garnished with additional Parmesan cheese and fresh herbs if you like.

Notes

  • You can substitute heavy cream with a dairy-free alternative like coconut cream or cashew cream to make this dish dairy-free.
  • For a vegetarian version, replace chicken breast with sautéed mushrooms and use vegetable broth instead of chicken broth.
  • Fresh gnocchi works best but frozen or store-bought gnocchi is fine as well.
  • To enhance flavor, add fresh herbs like parsley or basil as garnish.
  • Be careful not to overcook gnocchi; they should be golden and slightly crispy outside but soft inside.
