Instructions

  1. Cook the sausage: Place the Italian sausage in a large Dutch oven or heavy-bottomed pot over medium heat. Brown the sausage, breaking it apart with a spoon, until it’s fully cooked and no longer pink. Drain any excess grease from the pot.
  2. Sauté aromatics: Add the diced onion, Italian seasoning, salt, and ground black pepper to the sausage. Cook for 1 to 2 minutes until the onions soften slightly and the spices become fragrant.
  3. Add garlic: Stir in the minced garlic and cook for about 1 minute, taking care not to let it burn, so the garlic releases its aroma.
  4. Add liquids and pasta: Pour in the petite diced tomatoes (with their juices), chicken broth, and add the ditalini pasta. Ensure the pasta is fully submerged in the broth. Bring the mixture to a rolling boil, then reduce heat slightly and cook uncovered for about 8 minutes or until the pasta is al dente.
  5. Create the creamy base: Lower the heat to medium and stir in the softened cream cheese and grated Parmesan cheese. Continue cooking and stirring for another 5 minutes until the cream cheese fully melts and incorporates into the soup, creating a rich, creamy texture.
