Chicken Marinade
- 2 boneless, skinless chicken breasts, thinly sliced
- 1/4 cup teriyaki sauce
- 1 tbsp sesame oil (divided)
- 1 tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
Coleslaw
- 2 cups coleslaw mix (cabbage and carrots)
- 2 green onions, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp honey
- Remaining 1/2 tbsp sesame oil
Assembly
- 12 wonton wrappers
- 2 tbsp sweet chili sauce
- 1 tsp sesame seeds
- 2 tbsp chopped cilantro
- Marinate Chicken: In a medium bowl, combine the thinly sliced chicken breasts with teriyaki sauce, half of the sesame oil (1/2 tbsp), low-sodium soy sauce, minced garlic, and freshly grated ginger. Mix well and let it marinate for 10 minutes to infuse the flavors.
- Cook Chicken: Heat a skillet over medium heat and cook the marinated chicken until fully cooked through and no longer pink, about 5 to 7 minutes, stirring occasionally to ensure even cooking.
- Prepare Coleslaw: In a separate bowl, toss together coleslaw mix, thinly sliced green onions, rice vinegar, honey, and the remaining 1/2 tbsp of sesame oil. Mix well so the vegetables are lightly coated and flavorful.
- Fry Wonton Wrappers: In a pan, heat a small amount of oil over medium-high heat. Lightly fry each wonton wrapper for 20 to 30 seconds per side until they become crispy and golden. Remove and drain on paper towels to remove excess oil.
- Assemble Tacos: Place a portion of the cooked chicken inside each crispy wonton shell, top with a spoonful of the prepared coleslaw, and drizzle with sweet chili sauce for a sweet and spicy kick.
- Garnish and Serve: Sprinkle sesame seeds and chopped cilantro over the assembled wonton tacos for a fresh, nutty finish. Serve immediately while the wontons stay crisp.
Notes
- You can substitute chicken breasts with chicken thighs for more juiciness.
- Adjust the sweet chili sauce according to your preferred sweetness and spice level.
- Frying the wontons carefully is key to prevent burning; monitor cooking times closely.
- If preferred, baked wonton wrappers can be used for a less oily version, but frying yields a crispier texture.
- These tacos are best served fresh to maintain the wontons’ crispiness.
