Ingredients

Scale

For the Salmon:

  • 1 pound salmon fillets, skin removed
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

For the Spicy Sauce:

  • ¼ cup mayonnaise
  • 2 tablespoons Thai sweet chili sauce
  • 1 teaspoon sriracha
  • 1 teaspoon honey
  • ½ teaspoon lime juice

Instructions

  1. Prepare the Salmon: Cut the salmon fillets into 1-inch cubes, removing any remaining skin or bones. Pat the salmon pieces completely dry with paper towels – this is crucial for achieving that perfect crispy exterior.
  2. Season the Salmon: In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper. Add the salmon cubes and gently toss until every piece is evenly coated with the spice mixture.
  3. Make the Spicy Sauce: While the salmon marinates, whisk together the mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice in a small bowl until smooth. Adjust the heat level by adding more sriracha if desired. Set aside.
  4. Cook the Salmon: Heat a large skillet or cast-iron pan over medium-high heat. Once hot, add the seasoned salmon cubes in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes per side until golden brown and crispy on the outside and cooked through. The internal temperature should reach 145°F (63°C).
  5. Serve: Transfer the crispy salmon bites to a serving plate and drizzle with the spicy sauce or serve the sauce on the side for dipping. Garnish with chopped green onions, sesame seeds, or fresh cilantro if desired.

Notes

  • Ensure salmon pieces are thoroughly dried to achieve maximum crispiness.
  • Cook salmon in batches if needed to prevent overcrowding and ensure a crisp crust.
  • Maintain medium-high heat to get a good sear without burning spices.
  • If the sauce is too thick, thin it out with a teaspoon of water or lime juice; if too thin, add more mayonnaise.
