Ingredients

Scale

Chicken and Vegetables

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 8 oz cremini or baby bella mushrooms, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced

Sauce

  • 1/3 cup balsamic vinegar
  • 1/4 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Other

  • 1 tbsp olive oil
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Fresh parsley, for garnish

Instructions

  1. Prepare and Sear the Chicken: Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the chicken breasts or thighs on each side for about 2 minutes until lightly browned. This step is optional but enhances the flavor of the dish.
  2. Assemble Ingredients in Crockpot: Transfer the seared chicken to the crockpot. Add the sliced mushrooms, thinly sliced onion, and minced garlic evenly on top of the chicken.
  3. Mix the Sauce: In a small bowl, whisk together the balsamic vinegar, chicken broth, soy sauce, honey, dried oregano, dried thyme, salt, and black pepper until well combined.
  4. Add Sauce and Cook: Pour the balsamic sauce mixture over the chicken and vegetables in the crockpot. Cover with the lid and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.
  5. Thicken Sauce (Optional): If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water to create a slurry. Stir this mixture into the crockpot during the last 30 minutes of the cooking time.
  6. Serve and Garnish: Once cooked, spoon the chicken with mushrooms and sauce onto plates and garnish with fresh parsley. Serve warm and enjoy your flavorful crockpot meal!

Notes

  • Searing the chicken is optional but adds depth of flavor.
  • You can use either chicken breasts or thighs depending on preference; thighs will be more tender and juicy.
  • Adjust the cooking time based on your crockpot’s temperature variations.
  • Thickening the sauce with cornstarch is optional but recommended if you prefer a gravy-like consistency.
  • Serve with rice, mashed potatoes, or steamed vegetables for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently to avoid overcooking the chicken.
