Ingredients

Scale

For the Streusel

  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar (or light muscovado)
  • 1 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, cubed

For the Cake Batter

  • 1 stick (8 tablespoons) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon fine sea salt
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder

Fruit Topping

  • 14 oz Italian (European) plums, pitted and sliced into wedges

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) with a rack positioned in the center. Butter the bottom and sides of your baking pan, line the bottom with greased parchment paper, and dust the insides of the pan with flour to prevent sticking. Set aside.
  2. Make the Streusel: In a medium bowl, combine the sugar, cinnamon, and cubed butter. Mash the ingredients together with a fork or your hands until the sugar mixes evenly with the butter. Add the flour and continue pinching the mixture until it becomes crumbly. Place the streusel in the refrigerator to chill while you prepare the cake batter.
  3. Prepare the Batter: In a medium bowl, beat the softened butter and granulated sugar together until smooth and fluffy, about a few minutes. Add the eggs one at a time, whisking well after each addition to fully incorporate. Stir in the vanilla extract and sea salt. Sift together the flour and baking powder and whisk them into the wet mixture just until combined without overmixing.
  4. Assemble the Cake: Scrape the batter into the prepared pan and smooth the top evenly. Remove pits from the plums and slice each plum into four wedges. Arrange the plum slices closely together, covering the entire surface of the cake. Evenly sprinkle the chilled streusel topping over the plums.
  5. Bake the Cake: Bake in the preheated oven for 50 to 60 minutes, or until the top is golden brown and fragrant. Test doneness by inserting a cake tester or toothpick into the center; it should come out clean or with only plum residue, but no wet batter.
  6. Cool and Serve: Allow the cake to cool in the pan for at least 30 minutes before removing. Dust the top with powdered sugar for an elegant finish. Store the cake covered in the refrigerator and consume within 2 to 3 days for optimal freshness.

Notes

  • Use ripe but firm Italian (European) plums for the best flavor and texture.
  • The streusel can be prepared ahead of time and refrigerated until needed.
  • Allow eggs to come to room temperature before mixing to ensure a smooth batter.
  • Ensure to grease and flour the pan well to prevent sticking.
  • Store leftovers covered in the refrigerator to maintain freshness for up to 3 days.
