Ingredients

Scale

Roll Ups

  • 1 lb thinly sliced roast beef (deli style or leftover)
  • 1½ cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

Au Jus Sauce

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare Tortillas: Lay the flour tortillas flat on a clean surface. Evenly layer the thinly sliced roast beef down the center of each tortilla, followed by a generous sprinkling of shredded mozzarella or provolone cheese.
  3. Roll Tortillas: Carefully roll each tortilla tightly around the filling, then place them seam-side down on the prepared baking sheet to keep the roll ups intact while baking.
  4. Season Roll Ups: Brush the tops of the rolled tortillas with melted butter. Sprinkle evenly with garlic powder, onion powder, and dried parsley to add flavor and a light golden crust when baked.
  5. Bake: Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, or until the tortillas turn golden brown and the cheese inside has melted beautifully.
  6. Make Au Jus: While the roll ups are baking, prepare the au jus dipping sauce. In a saucepan over medium heat, combine beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper. Allow the mixture to simmer gently for 5 to 7 minutes to develop the flavors.
  7. Serve: Once baked, remove the roll ups from the oven and let them cool slightly. Slice into bite-sized pieces if desired and serve warm alongside the prepared au jus for dipping.

Notes

  • Use either mozzarella or provolone cheese based on preference; provolone offers a more traditional flavor.
  • For a crispier roll up, you can broil them for the last 1-2 minutes but watch closely to prevent burning.
  • Leftover roast beef works perfectly if you want to reduce prep time.
  • Adjust salt and pepper in the au jus to suit your taste preferences.
  • These roll ups make great party appetizers or a quick dinner option.
