Ingredients

Scale

Vegetables

  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced

Seasonings & Oils

  • 2 tbsp olive oil
  • 2 tbsp butter
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 tbsp lemon juice

Optional

  • ¼ cup Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Heat the Skillet: In a large skillet over medium heat, add the olive oil and butter. Allow the butter to melt completely and the mixture to heat up, providing a flavorful base for the vegetables.
  2. Sauté the Veggies: Add the cauliflower florets to the skillet and cook for 5-6 minutes, stirring occasionally, until they develop a slight golden color and begin to become tender. Then, add the sliced mushrooms and continue cooking for another 4-5 minutes until the mushrooms soften and release their juices.
  3. Add Garlic & Seasonings: Stir in minced garlic, smoked paprika, Italian seasoning, salt, and black pepper. Cook for an additional 2 minutes, stirring frequently, until the garlic becomes fragrant and the spices thoroughly coat the vegetables.
  4. Finish & Serve: Remove the skillet from heat. Drizzle the lemon juice over the sautéed vegetables, sprinkle with Parmesan cheese if desired, and garnish with freshly chopped parsley. Serve hot immediately for best flavor.

Notes

  • For a vegan version, omit the butter and Parmesan or substitute with vegan alternatives.
  • You can substitute smoked paprika with regular paprika if you prefer a milder smoky flavor.
  • Adding a splash of vegetable broth during cooking can enhance the moisture and flavor of the dish.
  • This dish pairs well with grilled meats or can be served as a hearty vegetarian side.
  • Leftovers store well in an airtight container in the refrigerator for up to 3 days.
