Salad Ingredients

  • 1 bunch radishes, sliced 1/8"
  • 1 lemon (juice and zest)
  • 1 tbsp olive oil
  • 1/4 cup fresh grated Parmesan (plus extra for topping)
  • 2 tbsp fresh dill, torn
  • Salt & black pepper to taste

Instructions

  1. Slice Radishes: Slice the radishes thinly and evenly, about 1/8 inch thick. Place the sliced radishes into a mixing bowl to prepare for dressing.
  2. Lemon Massage: Squeeze the juice from half the lemon over the radishes in the bowl. Add a big pinch of salt and gently massage the radishes for 1–2 minutes to soften them slightly and enhance flavor.
  3. Add Dressing: Pour in the olive oil, then add the grated Parmesan and torn fresh dill. Toss everything gently to combine the ingredients and coat the radishes evenly.
  4. Plate the Salad: Transfer the dressed radishes onto a serving plate. Garnish with lemon zest, extra Parmesan cheese, additional dill, and a sprinkle of black pepper for extra freshness and flavor.
  5. Serve Immediately: This radish salad is best enjoyed fresh, so serve right away to retain the crisp texture and bright flavors.

Notes

  • Use fresh, firm radishes for the best texture and flavor.
  • You can adjust the amount of lemon juice and olive oil to taste.
  • For a dairy-free version, omit the Parmesan or substitute with a vegan cheese alternative.
  • Serve this salad chilled or at room temperature.
  • The salad is best consumed immediately to maintain radish crunchiness, but can be refrigerated for up to a day if needed.
