Ingredients

Scale

Chicken and Seasoning

  • 4 very large boneless, skinless chicken breasts
  • 2 tsp olive oil
  • 2 tsp Greek Seasoning

Toppings

  • 1/2 cup cherry tomato halves
  • 1/2 cup chopped or sliced Kalamata olives (or black olives)
  • 1/2 cup sliced Greek peperoncini
  • 3/4 cup crumbled Feta cheese (adjust to taste)
  • Fresh-ground black pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking.
  2. Prepare the chicken: Trim the chicken breasts by removing any fatty or undesirable parts. Rub both sides of each breast with 2 teaspoons of Greek seasoning for flavor.
  3. Sear the chicken: Heat 2 teaspoons of olive oil in a frying pan over medium-high heat. Add the chicken breasts and cook for about 2 minutes on the first side until they start to brown slightly.
  4. Flip the chicken: Turn the chicken over and cook for a few more minutes on the other side. Avoid cooking fully as the chicken will finish cooking in the oven.
  5. Rest the chicken: Remove the chicken breasts to a cutting board and let them cool for a couple of minutes until safe to handle.
  6. Prepare toppings: While cooling, drain and slice the olives, halve the cherry tomatoes, remove seeds and slice the peperoncini, and crumble the feta cheese.
  7. Slice the chicken: Cut each chicken breast lengthwise into 3 to 4 strips for easier layering and serving.
  8. Arrange in casserole dish: Spray an 8″x13″ or 9″x12″ casserole dish with non-stick spray. Lay the chicken strips crosswise in the dish.
  9. Add toppings: Sprinkle the cherry tomatoes, sliced olives, and peperoncini evenly over the chicken strips. Then crumble the feta cheese on top.
  10. Season: Add fresh-ground black pepper to taste over the entire dish.
  11. Bake: Place the casserole dish in the preheated oven and bake for 25 minutes or until the chicken is hot through and the cheese starts to melt. Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (75°C).
  12. Serve: Remove from the oven and serve the Greek Chicken Bake hot. Enjoy the Mediterranean flavors!

Notes

  • Greek Seasoning typically contains a blend of oregano, garlic powder, onion powder, dill, thyme, and marjoram. You can use a store-bought mix or make your own.
  • If you prefer less heat, adjust the amount of peperoncini or remove the seeds to reduce spiciness.
  • Chicken breasts can be substituted with thighs if preferred, but cooking times may vary slightly.
  • Use an instant-read thermometer to ensure chicken is safely cooked to 165°F (75°C).
  • Non-stick spray helps prevent the chicken and toppings from sticking to the casserole dish.
