Ingredients

Scale

For the Chicken Marinade

  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For Serving

  • 4 pieces of warm pita bread
  • 1 cup tzatziki sauce (homemade or store-bought)
  • Fresh vegetables: sliced tomatoes, red onion, shredded lettuce

For Homemade Tzatziki Sauce (optional)

  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber, squeezed to remove excess water
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, smoked paprika, salt, and pepper. Add the chicken breasts, cut into strips, and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or overnight for enhanced flavor.
  2. Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Cook the marinated chicken strips for 5-7 minutes on each side or until the internal temperature reaches 165°F and the chicken is fully cooked and slightly charred on the edges.
  3. Prepare the Tzatziki Sauce: If making homemade tzatziki, combine Greek yogurt, grated cucumber (well drained), minced garlic, lemon juice, chopped dill, salt, and pepper in a bowl. Mix well and chill in the refrigerator until ready to serve.
  4. Warm the Pita Bread: Gently warm the pita bread on the grill or in a dry skillet for 1-2 minutes until soft and pliable.
  5. Assemble the Gyros: Place the grilled chicken strips onto the warmed pita bread. Add a generous spoonful of tzatziki sauce on top, then layer with fresh sliced tomatoes, red onion, and shredded lettuce.
  6. Serve: Roll the pita tightly around the filling and serve immediately while warm and flavorful.

Notes

  • For best results, marinate the chicken overnight to fully develop the flavors.
  • You can substitute chicken thighs for a juicier texture.
  • Homemade tzatziki sauce adds freshness, but store-bought works well too.
  • Use whole wheat pita bread for a healthier option.
  • To keep gyros warm, wrap them in foil after assembling.
