Ingredients

Scale

Beef Mixture

  • 1 lb ground beef (90% lean or higher recommended)
  • 2 tsp taco seasoning (store-bought or homemade)

Base

  • 2 cups cooked rice (white, brown, jasmine, basmati, or cauliflower rice)

Vegetables and Beans

  • 1 cup black beans (drained and rinsed if canned)
  • 1 cup corn kernels (fresh, canned or frozen)

Toppings and Garnishes

  • Salsa, to taste
  • Guacamole, to taste
  • Shredded cheese, to taste
  • Fresh cilantro, to taste

Instructions

  1. Cook the Ground Beef: Warm a large skillet or pan over medium-high heat. Add a teaspoon of oil if using lean beef to prevent sticking. Add 1 lb ground beef, breaking it into crumbles with a spatula. Sprinkle 2 tsp taco seasoning as the beef begins to brown. Stir frequently and cook until no pink remains, about 7–10 minutes. Drain excess fat if necessary and remove from heat.
  2. Prepare the Rice: Choose your preferred rice type. Follow package instructions to cook the rice, typically boiling then simmering until liquid is absorbed. Fluff the cooked rice with a fork and keep warm until assembly.
  3. Prepare Beans and Corn: If using canned beans and corn, rinse and drain thoroughly to reduce sodium. Optionally warm in a saucepan or microwave if preferred warm or serve at room temperature.
  4. Assemble the Burrito Bowls: Spoon 2 cups of cooked rice into each serving bowl. Top with an even amount of the seasoned ground beef. Scatter 1 cup black beans and 1 cup corn kernels over the beef. Add preferred amounts of salsa, guacamole, shredded cheese, and cilantro. Serve immediately while warm, allowing cheese to melt slightly.

Notes

  • Use ground beef with 90% lean or above for a healthier option, or substitute ground turkey or chicken for a lighter version.
  • Make homemade taco seasoning with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper to control sodium.
  • Rinse and drain canned beans and corn to reduce excess sodium and improve freshness.
  • Customize toppings by adding diced tomatoes, sliced jalapeños, or shredded lettuce for extra flavor and texture.
  • Rice options include white, brown, jasmine, basmati, or even nutrient-rich cauliflower rice for low-carb alternatives.
