  • 1 pound Ground Chicken
  • 1 packet Taco Seasoning (or homemade seasoning blend)
  • 15 oz can Beans (black beans or pinto beans preferred, drained or undrained based on preference)
  • 10 oz can Diced Tomatoes and Green Chiles
  • 1 cup (170g) Frozen Roasted Corn
  • 1/2 cup Chicken Broth or Water
  • 6 Extra Thin Corn Tortillas, cut into thin strips
  • 4 oz Shredded Mexican Cheese blend

Instructions

  1. Preheat and Prep: Preheat your oven to 400ºF. Heat the olive oil in a large skillet over medium-high heat to prepare for cooking the ground chicken.
  2. Cook Chicken: Add the ground chicken to the hot skillet. Let it cook for 3-4 minutes undisturbed to brown one side, then break apart and continue cooking until fully cooked through and no longer pink.
  3. Add Seasoning and Veggies: Stir the taco seasoning or your chosen spice blend into the cooked chicken until well mixed. Then add the can of beans (including liquid if you prefer a saucier casserole), diced tomatoes and green chiles, frozen corn, and chicken broth or water. Mix thoroughly.
  4. Add Tortillas and Cheese: Gently fold in the thin strips of corn tortillas to incorporate them evenly throughout the mixture. Sprinkle the shredded Mexican cheese evenly over the top of the mixture in the skillet or casserole dish.
  5. Bake: Place the skillet or transfer contents to a baking dish, then bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the tortilla edges are slightly browned and crispy.
  6. Garnish and Serve: Remove from oven and garnish with your favorite toppings such as chopped cilantro, salsa macha, hot sauce, sour cream, or nonfat Greek yogurt. Serve warm and enjoy!
