Tzatziki

  • 1 cup coconut yogurt (such as Culina)
  • 3 tbsp cucumber, diced
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • Pinch of salt
  • Juice of 1/4 lemon

Ground Chicken

  • 2 tsp olive oil
  • 1 lb ground chicken
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dill
  • 1 tbsp parsley
  • Juice of 1/2 lemon
  • Salt and pepper to taste (omit pepper for AIP)

To Serve

  • Rice or cauliflower rice

Instructions

  1. Prepare Greek Salsa: Combine diced cucumber, red onion, kalamata olives, salt, pepper, lemon juice, fresh dill, and parsley in a bowl. Toss well to combine and chill in the refrigerator to let flavors meld.
  2. Make Tzatziki: In another bowl, mix coconut yogurt with diced cucumber, fresh dill, garlic powder, a pinch of salt, and lemon juice. Set aside in the fridge to chill and develop flavor.
  3. Cook the Chicken: Heat olive oil in a pan over medium heat. Add ground chicken and crumble it as it cooks. Season with garlic powder, onion powder, oregano, dill, parsley, salt, pepper, and lemon juice. Stir continuously to evenly distribute seasonings and ensure the chicken is cooked through.
  4. Assemble Bowls: Place a few spoonfuls of your choice of rice or cauliflower rice into bowls. Add the cooked ground chicken. Top each bowl with a generous scoop of Greek salsa and a large spoonful of the prepared tzatziki. Serve fresh and enjoy.
