Ingredients

Scale

Main Ingredients

  • 1 cup cottage cheese
  • 1 medium red bell pepper
  • 1 garlic clove
  • 1 tsp smoked paprika
  • Olive oil (for drizzling over the pepper)
  • 1/4 tsp salt
  • Black pepper (to taste)

Instructions

  1. Roast the red pepper: Drizzle the red bell pepper lightly with olive oil. Roast it in an air fryer or conventional oven at 400°F (200°C) for 15–18 minutes if using an air fryer, or 20–25 minutes if using an oven, until the pepper is soft and the skin is blistered and slightly charred.
  2. Let it cool and peel: Allow the roasted red pepper to cool for a few minutes. Then, peel off the skin carefully, remove the seeds and stem, and set the roasted pepper aside.
  3. Blend it up: Combine the cottage cheese, smoked paprika, roasted red pepper, garlic clove, salt, and black pepper in a blender or food processor. Blend for about 1 minute until the mixture is smooth and creamy.
  4. Plate and finish: Spoon the dip into a serving bowl. Optionally, garnish with a sprinkle of extra smoked paprika, some chili flakes, and chopped chives for added flavor and color.
  5. Serve it up: Serve the dip with crunchy vegetable sticks like cucumber and carrot, or with mini toasts and crackers. This versatile dip complements a wide range of snacks.

Notes

  • If you don’t have an air fryer, roasting the pepper in a conventional oven works equally well.
  • Peeling the pepper skin after roasting enhances the dip’s texture, making it smoother and less bitter.
  • Adjust the amount of smoked paprika and garlic to suit your taste preferences.
  • For extra kick, sprinkle in chili flakes or add a small pinch when blending.
  • Store leftover dip in an airtight container in the refrigerator for up to 3 days.
