Instructions

  1. Preheat the oven: Set your oven to 360°F (180°C) to ensure even baking of the muffins once they are placed inside.
  2. Mix wet ingredients: In a large mixing bowl, whisk together the egg, honey, Greek yogurt, vanilla extract, and olive oil until the mixture is smooth and well blended.
  3. Combine dry ingredients: Add the plain flour, vanilla protein powder, baking powder, and baking soda to the wet mixture. Stir gently until just combined to avoid dense muffins.
  4. Fold in blueberries: Carefully fold in the fresh blueberries using a spatula or spoon, ensuring not to crush them to prevent the batter from turning purple and mushy.
  5. Fill muffin tin: Spoon the batter evenly into a lined muffin pan, filling 12 regular-sized muffin cups.
  6. Bake: Place the pan in the center of the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
