Instant Pot Mississippi Pot Roast is a comforting and flavorful dish featuring a tender, juicy chuck roast cooked with ranch seasoning, au jus gravy mix, onions, and garlic. This recipe utilizes the Instant Pot to create a rich, savory meal perfect for family dinners, with an optional searing step to develop a golden crust and an option to add vegetables for extra nutrition and color.

Ingredients

Scale

Main Ingredients

  • 34 lb. Chuck Roast
  • 1 packet (1 ounce) Ranch Seasoning Mix
  • 1 packet (1 ounce) Au Jus Gravy Mix
  • 1 cup Beef Broth
  • 1 medium Yellow Onion, peeled and quartered
  • 2 cloves Garlic, minced
  • 1 tbsp Olive Oil (optional, for searing)

Optional Vegetables

  • Potatoes (as desired)
  • Carrots (as desired)
  • Celery (as desired)

Instructions

  1. Prepare the Chuck Roast: Pat the chuck roast dry with paper towels to ensure an even sear. Generously coat the roast with ranch seasoning and au jus gravy mix, rubbing the seasoning evenly over all sides for a bold flavor.
  2. Sear the Roast (Optional): Set the Instant Pot to “Sauté” mode and add olive oil. Once hot, brown the chuck roast on all sides to develop a golden crust. This step enhances the flavor and appearance but can be skipped for convenience.
  3. Build the Flavor Base: Remove the roast temporarily and add the quartered yellow onion and minced garlic to the Instant Pot. Pour in one cup of beef broth to partially submerge the onions and garlic, creating a flavorful cooking liquid.
  4. Pressure Cook: Place the seasoned chuck roast on top of the onions and garlic in the pot. Secure the Instant Pot lid, set the valve to “Sealing,” and pressure cook on high for 90 minutes to ensure the meat becomes tender and flavorful.
  5. Natural Pressure Release: Once cooking is complete, allow the pressure to release naturally for 20 minutes. This gradual release helps the roast remain juicy and tender. After 20 minutes, manually release any remaining pressure.
  6. Shred and Serve: Carefully remove the chuck roast from the pot and shred the meat using two forks. Mix the shredded meat back into the cooking liquid with onions and any rendered juices, then serve hot. Pair with mashed potatoes, crusty bread, or your preferred sides.

Notes

  • For the best flavor, use a well-marbled chuck roast.
  • Searing the roast is optional but recommended to develop deeper flavor and color.
  • Adding optional vegetables like potatoes, carrots, and celery can make it a one-pot meal.
  • Letting the pressure release naturally is crucial for tender meat.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • This recipe can be adjusted to taste by adding more or less seasoning.
