Ingredients

Scale

Pie Crust

  • 1 pre-made chocolate pie crust

Pudding Mixture

  • 1/4 cup hot water
  • 1 tablespoon instant espresso powder
  • 1 (3.4-ounce) package instant chocolate pudding mix
  • 1/2 cup Irish cream liqueur (e.g., Baileys)
  • 1 1/2 cups milk

Topping

  • 8 ounces whipped topping (e.g., Cool Whip), divided
  • 1/4 cup chocolate shavings or cocoa powder (optional, for garnish)

Instructions

  1. Dissolve Espresso Powder: In a small bowl, dissolve the instant espresso powder in the hot water and let it cool for about a minute.
  2. Mix Pudding Ingredients: In a large mixing bowl, whisk together the instant chocolate pudding mix, milk, Irish cream liqueur, and the cooled espresso mixture until well combined.
  3. Beat Mixture: Beat the pudding mixture for about 2 minutes until it begins to thicken and become creamy.
  4. Fold in Whipped Topping: Gently fold in two-thirds of the whipped topping into the pudding mixture until fully incorporated and smooth.
  5. Fill Pie Crust: Spoon the prepared filling into the pre-made chocolate pie crust and smooth out the top evenly.
  6. Add Remaining Topping: Spread the remaining whipped topping over the top of the pie for a creamy finish.
  7. Refrigerate: Place the pie in the refrigerator for at least 4 hours to fully set and chill.
  8. Garnish and Serve: Just before serving, garnish the pie with chocolate shavings or a dusting of cocoa powder if desired.

Notes

  • Use a good quality Irish cream liqueur for the best flavor.
  • If you prefer a stronger coffee flavor, increase the instant espresso powder to 1 1/2 tablespoons.
  • The pie needs several hours of chilling, so plan ahead before serving.
  • For a lower alcohol version, reduce or omit the Irish cream and substitute with milk or cream.
  • Chocolate shavings can be made by using a vegetable peeler on a chocolate bar.
