Remove the chicken from the pan and set aside.
- Prepare the eggs and rice: Add the remaining 1 tablespoon of vegetable oil to the same skillet. Add the cooked rice and break up any clumps. Push the rice into a ring around the edges of the pan, creating a well in the center. Crack the eggs into the center and scramble them immediately, cooking until the eggs are fully set.
