This Lemon Blueberry Swirl Ice Cream Terrine is a delightful no-bake frozen dessert combining tangy lemon ice cream with sweet blueberry jam swirls atop a buttery graham cracker crust. Easy to prepare and perfect for summertime treats, it offers a refreshing fruity flavor with a crunchy base, elegantly presented in slices.

Ingredients

Scale

Crust

  • 1 cup crushed graham crackers
  • 1/2 cup melted butter

Ice Cream Layer

  • 1 quart lemon ice cream, softened
  • 1/2 cup blueberry jam or preserves

Garnish

  • Fresh blueberries for garnish (optional)

Instructions

  1. Prepare the crust. In a bowl, mix the crushed graham crackers with the melted butter until well combined. Line a loaf pan with plastic wrap and press the mixture evenly into the bottom of the pan to form a firm crust. Place in the freezer for 15 minutes to set.
  2. Layer the ice cream and jam. Spread half of the softened lemon ice cream evenly over the chilled crust. Dollop a few spoonfuls of blueberry jam on top and use a knife or skewer to gently swirl the jam into the ice cream. Add the remaining lemon ice cream over this layer and repeat the swirling process with more blueberry jam for a beautiful marbled effect.
  3. Freeze until firm. Cover the loaf pan securely with plastic wrap and place it in the freezer for at least 4 hours, or until the terrine is completely firm and set.
  4. Serve. When ready to serve, carefully lift the terrine out of the pan using the plastic wrap. Slice into desired portions and garnish with fresh blueberries if using for an extra pop of flavor and color.

Notes

  • For best swirling results, use softened ice cream but not melted; this helps maintain texture.
  • You can substitute blueberry jam with other fruit preserves like raspberry or blackberry for variety.
  • To make slicing easier, let the terrine soften slightly at room temperature for 5 minutes before cutting.
  • Store leftovers tightly covered in the freezer to maintain freshness.
