Ingredients

Scale

Meatloaf

  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Mushroom Gravy

  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Oven: Preheat your oven to 350°F (175°C). Grease a casserole dish or line a baking sheet with parchment paper to prevent sticking.
  2. Mix the Meatloaf: In a spacious mixing bowl, combine ground beef, breadcrumbs, finely chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, dried thyme, and dried oregano. Season generously with salt and freshly ground black pepper. Mix everything gently with your hands until just combined to keep the meatloaf tender.
  3. Shape and Bake: Shape the meat mixture into a loaf and place it in your prepared dish. Bake in the preheated oven for 50-60 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C).
  4. Prepare the Gravy: While the meatloaf bakes, melt unsalted butter in a skillet over medium heat. Add sliced mushrooms and cook until golden brown and fragrant, about 5-7 minutes.
  5. Finish the Gravy: Sprinkle the all-purpose flour over the mushrooms, stirring constantly for 2 minutes to cook the flour. Gradually whisk in the beef broth followed by the heavy cream. Continue to stir and cook the gravy for 5-7 minutes until it thickens to a velvety consistency. Season with salt and freshly ground black pepper to taste.
  6. Serve: Let the meatloaf rest for a few minutes after baking. Slice into thick portions and ladle the hot mushroom gravy over each serving before serving.

Notes

  • Do not overmix the meatloaf mixture to ensure a tender texture.
  • Use fresh mushrooms for the best flavor in the gravy.
  • You can prepare the mushroom gravy ahead and reheat gently when serving.
  • Letting the meatloaf rest before slicing helps retain juiciness.
  • Check the internal temperature with a meat thermometer to ensure safe doneness.
