Instructions

  1. Boil the eggs: Arrange the eggs in a single layer in a pot and cover them with cold water, at least an inch above the eggs. Bring the water to a full boil over high heat, then boil the eggs uncovered for 10 minutes. Remove from heat and immediately run cold water over the eggs to stop cooking.
  2. Crack the shells: Using the back of a spoon or by gently rolling the eggs on the counter, crack the shells carefully without peeling them.
  3. Dye the eggshells: Fill a large bowl with water and add black gel food dye, whisking until the water turns completely black. Submerge the cracked eggs fully in this black dye water, ensuring the cracks allow color to seep in creating a marbled effect. Refrigerate for at least 4 hours to deepen the color.
  4. Peel and halve eggs: After dyeing, carefully peel the eggs under cool running water to remove all shells. Cut each egg lengthwise in half and transfer the yolks into a separate mixing bowl.
  5. Prepare the filling: Add mayonnaise, Dijon mustard, green gel food dye, hot sauce, smoked paprika, salt, and black pepper to the yolks. Mash together with a fork until smooth and creamy, adjusting seasoning to taste.
  6. Fill the egg whites: Spoon or pipe the green yolk filling evenly into the egg white halves. Use a piping bag fitted with a wide star tip for a decorative finish if desired.
