Ingredients

Scale

Apple Filling

  • 2 apples, peeled and finely chopped
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 tbsp unsalted butter

Assembly

  • 1 can (16.3 oz) refrigerated biscuit dough
  • 8 pieces caramel candy
  • 2 tbsp butter, melted
  • Cinnamon sugar (optional, for sprinkling)

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C) and grease a medium baking dish with cooking spray to prevent sticking.
  2. Cook Apple Filling: In a medium skillet over medium-high heat, melt 1 tablespoon of unsalted butter. Add the peeled and finely chopped apples, brown sugar, ground cinnamon, and a pinch of salt. Cook, stirring occasionally, until the apples are tender and the mixture is bubbling, approximately 5 minutes. Once done, set aside to cool slightly.
  3. Prepare Biscuit Dough: Remove the refrigerated biscuit dough from the can and separate the biscuits. Slightly stretch each biscuit, then flatten each one evenly using your fingers, a rolling pin, or a tortilla press to create thin rounds that will hold more filling without tearing.
  4. Assemble Pie Bombs: Spoon about 1 tablespoon of the cooled apple filling into the center of each flattened biscuit. Place one piece of caramel candy on top of the apple filling. Carefully bring the edges of the dough up around the filling and pinch tightly to seal completely, then gently roll into a ball shape.
  5. Arrange and Brush: Place each filled dough ball seam side down into the prepared baking dish. Brush the tops with melted butter to help them brown beautifully. Optionally, sprinkle cinnamon sugar over the tops for extra flavor and aroma.
  6. Bake: Bake in the preheated oven for 30 to 35 minutes or until the dough balls are golden brown on top and cooked through.
  7. Serve: Remove from the oven and carefully transfer the caramel apple pie bombs to a serving platter. Serve them warm, optionally with caramel sauce or a scoop of vanilla ice cream for an indulgent treat.

Notes

  • Make sure to seal the dough completely around the filling to prevent leaks during baking.
  • If caramel candies are too hard to unwrap or handle, briefly soften them in the microwave for 10 seconds.
  • For a crispier crust, use a rolling pin to flatten the biscuits more thinly.
  • Cinnamon sugar adds a lovely finishing touch but can be omitted for a less sweet topping.
  • Leftovers can be stored in an airtight container and reheated in the oven for best texture.
