Instructions

  1. Sauté Onions: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook until softened and translucent, about 5 minutes, stirring occasionally to prevent burning.
  2. Cook Mushrooms and Garlic: Add the minced garlic and finely chopped mushrooms to the skillet. Cook until the mushrooms release their moisture and become browned, approximately 10 minutes, stirring frequently for even cooking.
  3. Deglaze and Season: Pour in the dry white wine, then add thyme, salt, and black pepper. Stir to combine and allow the mixture to boil until the liquid is reduced by about 95%, roughly 2 to 3 minutes, to concentrate the flavors.
  4. Cool Mixture: Remove the skillet from heat and let the mushroom mixture cool slightly to avoid melting the cheese when combined.
  5. Combine with Cream Cheese Mixture: In a separate bowl, blend together the softened cream cheese and sour cream until smooth. Fold in the cooled mushroom mixture, grated Gruyere, grated Parmesan, and chopped parsley until evenly incorporated.
  6. Bake the Dip: Transfer the combined mixture into an oven-safe baking dish and bake in a preheated oven at 350°F (175°C) for 20 to 25 minutes, or until the dip is bubbly and the top is golden brown. Serve warm for best flavor.
