These no bake monster cookies are a delicious and easy-to-make treat combining creamy peanut butter, oats, and colorful M&M’s, topped with a smooth chocolate ganache. Perfect for a quick dessert or snack without turning on the oven.

  • 6 tablespoons butter, softened
  • 6 tablespoons sugar

  • ¾ cup creamy peanut butter
  • 6 tablespoons quick cooking oats, pulsed in food processor

  • ½ teaspoon salt
  • 1½ cups quick cooking oats, not pulsed
  • 8 tablespoons miniature M&M’s

Topping

  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons heavy cream
  • 2 tablespoons miniature M&M’s

Instructions

  1. Prepare the baking dish: Line an 8-inch baking dish with foil or parchment paper to prevent sticking and set aside.
  2. Cream butter and sugars: In a large mixing bowl, combine softened butter with sugar and brown sugar and beat until creamy and smooth.
  3. Add peanut butter and dry ingredients: Mix in the creamy peanut butter until well incorporated, then add the pulsed quick oats, vanilla extract, and salt. Gradually fold in the remaining whole oats and 8 tablespoons of miniature M&M’s to the mixture.
  4. Press mixture into pan: Transfer the cookie dough mixture into the prepared baking dish and press it firmly and evenly into place.
  5. Make chocolate topping: In a microwave-safe bowl, melt the semi-sweet chocolate chips with heavy cream, stirring every 30 seconds until smooth and glossy. Spread this chocolate ganache evenly over the pressed cookie dough.
  6. Add finishing touches: Sprinkle the remaining 2 tablespoons of miniature M&M’s on top of the chocolate layer for a fun colorful finish.
  7. Chill and set: Cover the dish and refrigerate for at least 2 hours or until the cookies are firm enough to cut into squares.
