Instructions

  1. Prepare the Peaches: Begin by washing and dicing the ripe peaches. For an added smoky depth, grill the peach slices for a few minutes on each side until they develop light grill marks and a caramelized aroma.
  2. Blend Everything Together: Place the diced (or grilled) peaches, honey, Dijon mustard, white balsamic vinegar, extra virgin olive oil, tamari or soy sauce, minced garlic, and salt and pepper into a blender or food processor. Blend the mixture until smooth and creamy, ensuring all ingredients are integrated.
  3. Adjust the Consistency: Check the thickness of your vinaigrette. If it’s too thick for your liking, slowly add a splash of water or an extra tablespoon of vinegar. Blend again briefly until you reach the desired consistency.
