Peanut Butter & Jelly Banana Bread Recipe

Introduction

This Peanut Butter & Jelly Banana Bread is a delightful twist on two classic favorites. Moist and flavorful, it combines ripe bananas with creamy peanut butter and sweet jam swirls for a comforting treat perfect for breakfast or an afternoon snack.

A loaf of bread with two slices cut from the back, revealing a light brown, soft texture with a wavy darker brown line near the middle, sits on crumpled parchment paper over a white marbled surface. The front of the loaf is topped unevenly with a thick, red fruit jam and a light brown creamy spread, creating a contrast of rough and smooth textures. Next to the loaf is an open glass jar filled with the same red jam, with a spoon inside it. A silver knife lies to the left on the parchment paper. Photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 4 medium bananas (about 2 1/2 cups, the riper the bananas the sweeter the bread)
  • 4 eggs
  • 1/2 cup + 2 tablespoons peanut butter or nut butter of your choice (155 grams)
  • 1/4 cup melted coconut oil (52 grams)
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour (56 grams)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup + 2 tablespoons jam (205 grams)

Instructions

  1. Step 1: Preheat the oven to 350°F (180°C) and grease or line a loaf pan. Set aside.
  2. Step 2: In a blender, combine the bananas, eggs, 1/2 cup of the peanut butter, and melted coconut oil. Blend until smooth.
  3. Step 3: Add the vanilla extract, coconut flour, cinnamon, baking powder, and salt to the blender. Blend again until fully combined.
  4. Step 4: Pour half of the batter into the prepared loaf pan. Drop 1/4 cup of jam in dollops over the batter, then use a butter knife to swirl the jam through.
  5. Step 5: Pour the remaining batter over the swirled layer. Dollop another 1/4 cup of jam on top and swirl again gently.
  6. Step 6: Bake for 55–60 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow the bread to cool completely in the pan.
  7. Step 7: Melt the remaining 2 tablespoons of peanut butter until just smooth. Drizzle the melted peanut butter and remaining jam over the cooled banana bread for a finishing touch. Slice and enjoy.

Tips & Variations

  • For added texture, stir in chopped nuts or chocolate chips before baking.
  • If you prefer a dairy-free version, ensure your peanut butter and jam contain no animal products.
  • Try swapping coconut flour for almond flour if you want a slightly different flavor and texture.
  • Use your favorite jam flavor—strawberry, grape, or raspberry all work wonderfully.

Storage

Store the banana bread in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze wrapped tightly for up to 3 months. Reheat slices in the microwave for about 20 seconds for a warm treat.

How to Serve

A loaf of bread with two slices cut in front shows three clear layers: the light brown inside texture with a soft crumb, a middle swirled layer of bright red raspberry jam mixed with smooth tan peanut butter, and a top layer that is thick with raspberry jam and drizzled peanut butter in uneven streaks. The bread rests on crumpled brown parchment paper on a white marbled surface. To the left, a small clear jar of chunky red raspberry jam sits, and to the right, a knife lies on the surface near a folded green cloth. Photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use regular flour instead of coconut flour?

Coconut flour absorbs more moisture than regular flour, so direct substitution is not recommended. If using regular flour, reduce the amount to about 1/3 cup and adjust the wet ingredients accordingly.

Can I make this bread nut-free?

Yes, you can replace the peanut butter with sunflower seed butter or another seed butter to keep it nut-free while maintaining a similar texture and flavor.

  • Swirling the jam creates a beautiful marbled look and adds a fruity burst in every bite.
  • Make sure not to overblend the batter after adding the dry ingredients to maintain good texture.
