  • 1 teaspoon vanilla extract

  • 1/2 cup coconut flour (56 grams)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

  • 1/2 cup + 2 tablespoons jam (205 grams)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (180°C) and grease or line a loaf pan. Set it aside for now to get ready for the batter.
  2. Blend Wet Ingredients and Mix Dry Ingredients: In a blender, combine the bananas, eggs, 1/2 cup of nut butter, and melted coconut oil. Blend until smooth. Then add the vanilla extract, coconut flour, cinnamon, baking powder, and salt, and blend again just until combined.
  3. Layer Batter and Jam Swirls: Pour half of the batter into the prepared loaf pan. Measure 1/4 cup of jam and drop dollops over the batter. Use a butter knife to swirl the jam into the batter gently. Pour the remaining batter on top, then dollop and swirl the remaining 1/4 cup of jam over the top layer.
  4. Bake the Bread: Bake in the preheated oven for 55-60 minutes or until a toothpick inserted in the center comes out clean. Once baked, remove from the oven and allow the bread to cool completely in the pan.
  5. Final Drizzle and Serve: Melt the remaining 2 tablespoons of peanut butter in the microwave or on the stove until just melted. Drizzle the melted peanut butter along with some extra jam over the cooled banana bread. Slice and enjoy your Peanut Butter & Jelly Banana Bread!
