  • ¼ cup (55 g) baking soda

Instructions

  1. Preheat oven and prepare baking sheet: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to prevent sticking.
  2. Roll out dough and cut strips: Remove the pizza dough from the package and place it on a clean cutting board. Using a rolling pin, roll the dough out into a rectangle about ¼-inch thick. Cut the dough into 15 strips using a pizza cutter.
  3. Wrap dough around hot dogs: Take each dough strip and roll it into a rope, then tightly wrap it around each sausage frank, covering the entire length. Pinch the ends of the dough strips to seal and keep them from unraveling during cooking.
  4. Prepare boiling water with baking soda: In a large saucepan over medium heat, bring 5 cups of water to a gentle boil. Add in ¼ cup (55 g) of baking soda and stir until it dissolves completely.
  5. Boil the wrapped hot dogs: Working in batches of 3 to 4, carefully add the dough-wrapped sausages to the boiling baking soda water. Boil each batch for 20–30 seconds to achieve the distinct pretzel crust.
  6. Remove and place on baking sheet: Using a slotted spoon, lift the pretzel dogs from the boiling water and place them on the parchment-lined baking sheet to drain and cool briefly.
  7. Brush with egg wash and sprinkle salt: Brush the outside of each pretzel dog generously with the beaten egg to promote browning and shine. Then sprinkle evenly with kosher salt for flavor and texture.
  8. Bake until golden brown: Place the baking sheet in the preheated oven and bake for 20 to 21 minutes, or until the pretzel dough turns a beautiful golden brown and is cooked through.
