Roasted Pepper Sauce
- 2 large red bell peppers
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Garnish
- Fresh parsley for garnish
- Roast the Peppers: Preheat your oven to 400°F (200°C). Place the whole red bell peppers on a baking sheet and roast them for about 20 minutes until the skin is charred and blistered.
- Sauté Aromatics: While the peppers roast, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic, smoked paprika, and dried oregano. Stir and cook for another minute to release the aromas.
- Prepare Pepper Puree: Once the peppers are roasted, remove them from the oven and allow them to cool enough to handle. Peel off the charred skin, discard the seeds, and transfer the pepper flesh to a blender or food processor. Blend until smooth to create a creamy roasted pepper puree.
- Combine Sauce: Add the roasted pepper puree to the skillet with the sautéed onion and garlic mixture. Season with salt and pepper to taste. Simmer the sauce gently for 5 minutes to meld the flavors together, stirring occasionally.
- Cook the Tilapia: In a separate pan over medium heat, season the tilapia fillets lightly with salt and pepper. Cook each fillet for about 3-4 minutes on each side until the fish is golden and cooked through.
- Serve: Plate the tilapia fillets and generously spoon the roasted pepper sauce over them. Garnish with freshly chopped parsley for a pop of color and freshness. Serve immediately.
Notes
- If you don’t have a blender, you can finely chop the roasted peppers or use store-bought roasted red peppers as a shortcut.
- Adjust the smoked paprika to your taste for more or less smoky flavor.
- The tilapia can be substituted with other white fish fillets like cod or snapper.
- For extra richness, you can add a splash of cream to the pepper sauce while simmering.
- Serve with rice, quinoa, or crusty bread to soak up the delicious sauce.
