Spiced Cocoa Nuts are a deliciously crunchy and flavorful snack combining pecans, cashews, and almonds coated with a spiced mixture of cocoa, cinnamon, cayenne, and sugars.   • 1/2 cup white sugar
  • 2 tablespoons cocoa powder

  • 2 teaspoons cinnamon
  • 1 teaspoon salt

Coating

  • 1 egg white (from an extra large egg)
  • 1 tablespoon water

Instructions

  1. Preheat and Prepare Baking Sheets: Arrange oven racks to the center positions and preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper and set aside.
  2. Make Spice Mixture: In a medium bowl, combine the brown sugar, white sugar, cocoa powder, cayenne pepper, cinnamon, and salt. Whisk thoroughly to blend and break up any lumps in the brown sugar.
  3. Coat Nuts with Egg White: In a large bowl, whisk the egg white and water vigorously until foamy and light. Add the pecans, cashews, and almonds to the egg white mixture, stirring with a spatula until the nuts are completely coated and tacky, with no excess liquid remaining.
  4. Add Spice Mixture: Fold the prepared spice mixture into the coated nuts until they are evenly and thoroughly coated with the spiced sugar blend.
  5. Spread and Bake: Divide the nuts evenly between the two baking sheets, spreading them into a single layer. Place one sheet on the upper rack and the other on the lower rack of the oven. Bake for 10 minutes. Remove the sheets, stir or flip the nuts, swap the positions of the baking sheets, then bake for an additional 10 minutes.
  6. Cool and Store: Allow the nuts to cool on the baking sheets for a few minutes, then transfer them to a heatproof bowl to finish cooling. As they cool, they will harden and become crisp. Store in an airtight container for freshness.
