Ingredients

Scale

Garlic

  • 2 cups garlic cloves, peeled

Pickling Solution

  • 1 cup distilled white vinegar
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 tablespoon salt

Spices

  • 1 teaspoon red pepper flakes
  • 1 teaspoon black peppercorns
  • 1 tablespoon mustard seeds
  • 1 bay leaf
  • 1 small dried chili (optional for extra heat)

Instructions

  1. Prepare the Garlic: Start by peeling the garlic cloves carefully. This step might take some time but is crucial for the texture and flavor. Once peeled, place the garlic cloves in a clean jar or glass container.
  2. Make the Pickling Solution: In a small saucepan, combine the distilled white vinegar, water, sugar, and salt. Heat the mixture over medium heat, stirring occasionally until the sugar and salt are fully dissolved and the liquid comes to a boil.
  3. Add the Spices: Add the red pepper flakes, black peppercorns, mustard seeds, bay leaf, and the dried chili if using to the boiling pickling solution. Allow it to simmer for 5 minutes so the flavors meld together.
  4. Pickling Process: Carefully pour the hot pickling solution over the garlic cloves in the jar, ensuring the garlic is completely submerged. Use a clean weight or spoon if necessary to press the garlic down beneath the liquid.
  5. Seal and Let It Sit: Seal the jar tightly and let it cool to room temperature for 1–2 hours. After cooling, transfer the jar to the refrigerator. The pickled garlic will be ready to eat after 24 hours and will develop deeper flavors if left for longer.
  6. Serve and Enjoy: Incorporate the spicy pickled garlic into your meals by adding it to sandwiches, salads, or as a spicy topping for grilled meats. Enjoy the bold, spicy, and tangy taste right from the jar as well.

Notes

  • For best results, use fresh garlic cloves that are firm and unblemished.
  • The dried chili is optional; omit or adjust according to your heat preference.
  • The pickled garlic can be stored refrigerated for up to 1 month.
  • Ensure the garlic is fully submerged in the pickling liquid to avoid spoilage.
  • Flavor improves with time—try waiting at least 48 hours before consumption for maximum taste.
