  • 2 rings (13.9 ounces each) Kielbasa sausage

Sriracha Mayo Sauce

  • ¾ cup (174 g) mayonnaise
  • 4 ½ teaspoons Sriracha sauce
  • 1 ½ teaspoons freshly squeezed lime juice

Instructions

  1. Slice kielbasa hasselback style. Slice each kielbasa ring into ¼-inch slices without cutting all the way through by placing the kielbasa between two chopsticks or skewers to act as a cutting guard.
  2. Cut into 1-inch bite-sized pieces. Slice the kielbasa crosswise into 1-inch pieces (each with about 3 of the hasselback slices), yielding approximately 20 bites per ring, about 40 bites total.
  3. Make sriracha mayo sauce. In a small bowl, mix together the mayonnaise, Sriracha, and freshly squeezed lime juice until combined and smooth.
  4. Brush sauce over the kielbasa bites. Coat about half of the sriracha mayo sauce over the hasselback cuts on the kielbasa bites, making sure the sauce seeps between the slices. Reserve the remaining sauce for after cooking.
  5. Arrange bites in air fryer basket. Place the kielbasa bites in a single layer in the basket of an air fryer. Depending on your air fryer size, work in batches for even cooking.
  6. Air fry at 400°F for 7-9 minutes. Cook the bites until browned and slightly crispy on the edges, shaking the basket halfway through the cooking time to ensure even crisping.
  7. Remove and brush with reserved sauce. Take the cooked kielbasa bites out of the air fryer and place them on a platter or baking sheet. Brush the tops with the reserved sriracha mayo for extra flavor or serve it on the side as a dipping sauce.
  8. Garnish and serve. Optionally, garnish the kielbasa bites with chopped fresh parsley before serving for a fresh, colorful finish.
