Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, black pepper, and Italian seasoning. Mix until just combined, being careful not to over-mix to maintain tender meatballs.
  2. Stuff with Mozzarella: Take about 1-2 tablespoons of the meat mixture and flatten it in your palm. Place a cube of mozzarella cheese in the center, then carefully wrap the meat around it, sealing it completely. Roll into a ball. Repeat with the remaining mixture and cheese cubes.
  3. Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs in batches, avoiding overcrowding. Cook each side for about 4-5 minutes until browned and cooked through.
  4. Serve: Serve the meatballs warm with marinara sauce for dipping or over pasta. Garnish with extra Parmesan cheese and fresh basil if desired.
