Ingredients

Scale

Main Ingredients

  • 34 large ripe peaches (yellow or Elberta), sliced into thin wedges
  • 1 cup strawberries, hulled and halved
  • ½ cup blueberries (fresh or frozen)
  • ½ cup red grapes, halved
  • 23 tbsp fresh mint leaves, finely chopped

Glaze

  • 1 tbsp lime or lemon juice
  • 12 tbsp honey or maple syrup (optional)

Optional Add-ins

  • Citrus segments (orange or grapefruit)
  • Raspberries or blackberries
  • Nuts or seeds (toasted almonds, pecans, or chia seeds)
  • Greek yogurt or cottage cheese for topping

Instructions

  1. Prep your fruit: Wash all produce thoroughly. Slice cheeks into thin wedges (keep skin on or off based on your preference). Hull and halve the strawberries, halve the grapes, and leave the blueberries whole for best texture.
  2. Make the citrus glaze: In a small bowl, whisk together lime or lemon juice with honey or maple syrup. Adjust sweetness depending on the ripeness of your fruit to balance natural sugars.
  3. Combine the fruit: Place peaches, strawberries, blueberries, and grapes in a large mixing bowl. Drizzle the prepared citrus glaze over the fruit.
  4. Toss gently: Using a rubber spatula or clean hands, gently mix the salad to evenly coat the fruit with glaze while being careful not to mash delicate peaches and berries.
  5. Add mint & chill: Stir in the finely chopped fresh mint leaves. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld beautifully.
  6. Serve beautifully: Transfer the fruit salad into a serving bowl or individual jars or glasses. Garnish with extra mint leaves, lime zest, or a light drizzle of the citrus glaze before serving.

Notes

  • Use ripe peaches that yield slightly when gently pressed for optimal sweetness and juiciness.
  • Maple syrup is vegan-friendly; opt for honey if not vegan.
  • Frozen or canned peaches can be used, but fresh peaches provide the best texture and flavor. Drain canned peaches thoroughly.
  • Adjust sweetness by varying the amount of honey or maple syrup depending on fruit ripeness.
  • For a low-sugar option, omit sweeteners and add extra tart fruits like raspberries or lemon juice.
  • Optional add-ins like nuts or seeds add crunch and protein; Greek yogurt or cottage cheese add creaminess.
  • Chilling the salad helps the flavors meld, making it more refreshing for hot days.
