Instructions

  1. Cook the sausage: In a large pot over medium heat, brown the Italian sausage, breaking it apart with a spoon until fully cooked. Remove the browned sausage from the pot and set aside.
  2. Sauté aromatics: In the same pot, add chopped onion and minced garlic. Sauté until softened and fragrant, about 3 minutes.
  3. Add broth and beans: Pour in the chicken broth and add the drained white beans. Bring the mixture to a boil, then reduce heat to a simmer.
  4. Incorporate cream and cheeses: Stir in the heavy cream, chopped spinach, ricotta cheese, shredded mozzarella, and grated Parmesan cheese. Let the soup gently simmer for about 5 minutes, stirring occasionally to combine flavors.
  5. Cook noodles: Add the broken lasagna noodles into the soup. Continue cooking until the noodles are tender, approximately 10 minutes.
  6. Return sausage and season: Add the cooked sausage back into the soup and cook for an additional 5 minutes to meld flavors. Season the soup with salt and pepper to taste.
